Let’s start with some simple snacks…
Juicy Jack o’ Lanterns
Juicy Jack o’ Lanterns – these are juicy, yummy, and incredibly easy to make. Great for packed lunches or a pre-dinner snack. Ingredients: (1 Fruit) Small oranges or tangerines Celery stalks Directions: 2 Cut up celery stalks into 1 inch sections. 3 Add a celery stalk to each section as a stem. |
‘Deviled’ Eggs
Deviled Eggs – creamy, tangy and oh so devilish! Make a large batch so you can have a quick snack or make them for your costume party. Ingredients: (1 Protein, 1 Fat, 1 Vegetable) 2 Hard Boiled Eggs 1/2 tsp. of Yellow Mustard 1 tsp Light Mayoniase 1 Red Bell Pepper Paprika to taste Directions: 2 Cool, peel, slice and remove the yolk and place in separate bowl. 3 Add mustard and light mayo to yolk and mix well. 4 Add mixture to center of cooled egg. 5 Sprinkle with paprika to taste. 6 Cut thin, small slices of bell pepper and add to make horns. |
Now for a main dish and side…
Spooky Stuffed Bell Peppers
Spooky Stuffed Bell Peppers – make sure to grab yours before these all disappear! Ingredients: (1 Protein, 3 Vegetables) 5 oz Fresh Ground Turkey 1 Medium Green or Red pepper 1 Tomato Chopped 2 tbsp Onion Flakes Dash of Onion Powder Dash of Garlic Powder Dash Morton Lite Salt Dash of Pepper Pam Cooking Spray Directions: 2 Clean and wash pepper and cut out jack o’ lantern face. 3 Place pepper in salted water and bring to a boil. 4 Reduce heat and simmer for 5 minutes. 5 In a skillet sprayed with Pam, sauté green onion until tender. 6 Add tomato and spices and simmer 10 minutes uncovered. 7 In a large bowl combine turkey and tomato mixture, mix well. 8 Stuff pepper with meat mixture and place in baking dish. 9 Bake 1 hour. Serve hot and enjoy! |
Halloween Sweet Potato Fries
Halloween Sweet Potato Fries – these baked sweet potato fries are slightly caramelized and crispy on the outside but tender on the inside. Ingredients: (1 Starch) ½ small sweet potato ¼ tsp pumpkin pie spice or cinnamon Pam Cooking Spray Directions: 2 Scrub the sweet potatoes clean. 3 Slice sweet potatoes into 1/4 rounds. 4 Use mini cookie cutters to cut jack-o-lantern faces, stars, and pumpkins into the center of each sweet potato slice. Or, use a small knife and carve a mini jack-o-lantern face into the sweet potato slices. 5 Place sweet potatoes on a parchment-lined baking sheet spray with Pam and cook until tender, about 18-22 minutes. |

Halloween Orange Creamsicles
Halloween Orange Creamsicles – a perfect treat when you want something sweet. Ingredients: (1 Q-Snack) 12 fl oz Citrus, Orange, or Tangerine Diet Soda 1 Add QWLC vanilla pudding and orange diet soda to blender, mix well. 2 Pour equal amounts into separate containers. 3 Chill or freeze until mostly set and then add popsicle sticks. 4 Continue chilling until ready to enjoy! |
Baked Apple with Cinnamon
Baked Apple and Cinnamon – apples and cinnamon are the perfect combination and these can be enjoyed all fall long. A crunchy and sweet perfect treat. Ingredients: (1 Fruit, 1 Fat) 1 Small Apple Cinnamon to taste 1 tbsp Light Margarine ½ cup Water Directions: 2 Remove the apple core and place apple on baking sheet. 3 Melt the margarine and then pour in the apple core. |
