Super Bowl Veggie Dip
1 protein, 2 vegetables
6 oz 1 % Cottage Cheese
Mrs. Dash (or other seasoning with no salt or sugar)
Blend seasonings with cottage cheese until smooth.
Cover and chill long enough for flavors to meld, at least 3 hours.
Serve with 2 servings of your favorite on-plan veggies.
Touchdown Turkey Burgers
1 protein, ½ vegetable, 2 starches
5½ oz Ground Turkey Breast
2½ Small Green Onions, chopped
½ tsp Garlic powder
½ tsp Onion powder
½ tsp Red pepper flakes
2 Slices of 40 cal Bread
Set the bread aside to be used as a bun (toast if desired)
Place the ground turkey in a bowl along with all other ingredients.
Combine with your hands.
Mold the mixture into 1 patty and set on wax paper.
Heat a frying pan and coat with cooking spray (or cook on the grill).
Cook to desired temperature.
Enjoy on bread. Optional: add mustard and/or mayo (1 fat serving)
Grilled Potato “Skins”
1 starch, 1 protein, 1 vegetable
6 oz 1% Cottage Cheese or Plain Greek Yogurt
5 Small Green Onions
¼ tsp Cumin
¼ tsp Chili powder
¼ tsp Morton Lite Salt
¼ tsp Black pepper
In a food processor, combine cottage cheese or yogurt with green onions and blend until smooth. Season with MLS and black pepper to taste. Place in fridge until ready to use.
Mix together the cumin, chili powder, salt, and pepper in a small bowl and set aside.
Cut potato into wedges about 1 inch thick.
Spray wedges with cooking spray and cook over direct heat until browned and crisp on both sides, about 2 to 3 minutes per side.
Move the potatoes to a cooler part of the grill to continue cooking over indirect heat. Cover and continue to grill until cooked through, about 5 to 10 minutes longer.
Remove the potatoes from the grill to a large bowl. Sprinkle with the spice mixture and toss to coat. Serve immediately, using the onion mixture to dip.
